Guacamole Salad

My friend brought over this Guacamole Salad on the day we had barbeque. She taught me how to make it.

Ingredients:

1 Can of corn, drained, or chopped yellow bell pepper
1 Can of black Beans, drained
Some cherry tomatoes (or grape tomatoes), sliced in half

1 to 2 Jalepenos
1 red onion, sliced
1 avocado

Salad Dressing:

1 Lime, juiced
2 Tbsp red Wine Vinegar
2 Tbsp olive oil
1 Tbsp honey
Salt and Pepper

Directions:
  1. Mix all liquids well and set aside.
  2. Combine all the ingredients and add the salad dressing. Mix well and refrigerate for a few hours.
  3. Cut avocado into cubes and mix in when ready to serve

Japanese Chicken Salad - Ban Ban Ji 棒棒雞

We like to buy roasted chicken from Costco.  We always have left over chicken breasts.  I usually use it to make chicken salad.  This is the recipe I saw from a Japanese cooking show. This is a little different than the oriental chicken salad I made but it is very good.


Ingredients:

1 Cooked chicken breasts (see note), sliced
1 Cucumber
1 Tomatoes

Mixed sauce: (These are just estimate, adjust sauce to your prefer taste)
1 tbsp soy sauce
2 tbsp sesame paste
1 tbsp sugar
1 tsp sesame oil
1 green onion
1 tbsp rice vinegar
1 tsp minced ginger
Some hot sauce

Directions:
  1. Shred or cut cucumber into thin slices.
  2. Cut tomatoes in half first then thin slice it.  Place around the plate.
  3. Put shredded cucumber in the middle.
  4. Place sliced chicken breasts on top.
  5. Pour sauce on top of chicken and serve.
Note:  If you don't have left over cooked chicken breasts, here is the original recipe from the show on how to prepare in advance:

Place 2 pieces of raw chicken breasts in cold water.
Add a few of pepper corn.
Boil for 20 minutes in medium heat
Let cool off, slice chicken breasts.

Oriental Green Salad

My friend who collected the toothpicks containers told me how to make this delicious salad.

She also asked me to show the soy sauce I used everyday for cooking.  Both the soy sauce and Japanese salad vinegar have some sweet taste already, you do not need to add any sugar when cooking.
Ingredients:

1 part Salad Vinegar (see picture below)
2 Parts vegetable oil
2 Tbsp light soy sauce (see picture below)
1 tsp sesame oil
Sweet sesame walnuts (see recipe below), chopped
Green vegetables


Directions:

1. Mix all the liquid ingredients together.
2. Add shredded green vegetables, like lettuce and cucumbers.The premixed cabbage salad in the package will last longer without looking like they are wilted.
3. Add some sweet sesame walnuts (see recipe here).

Note:

If the salad tasted too sweet for you, add some soy sauce.  If it's too salty, then add some sugar. Always adjust any seasoning at your preferred taste.
