Furry Melon (Mao Gua ) Peanuts Soup 節瓜花生湯

Mao gua is a type of squash that has a long tapered shape with a light green, furry outer skin.  It is good for sautéing, stir frying, or using as an ingredient for soups and stews.  A furry and even size in shape is best to get when selecting mao qua. 
This soup is enriched with vitamins and it will help rejuvenate the skin.  It doesn't require a long time to cook.


Ingredients:

1 Mo Gua
2 Chicken Breasts
5 Shiitake Mushrooms
Some raw peanuts
4 Carrots
2 Dried Scallops

Directions:
  1. Soak peanuts, dried scallops and mushrooms in cold water and set aside.
  2. Add chicken breasts in cold water and bring to a boil.
  3. Add all soaked ingredients into the water and boil for 30 minutes on  medium low heat.
  4. Wash and peel mo gua and carrots. Cut into small pieces.
  5. Add carrots and mo gua and cook for an additional 30 minutes.
