1 Can of corn, drained, or chopped yellow bell pepper
1 Can of black Beans, drained
Some cherry tomatoes (or grape tomatoes), sliced in half
1 to 2 Jalepenos
1 red onion, sliced
1 Lime, juiced
2 Tbsp red Wine Vinegar
2 Tbsp olive oil
1 Tbsp honey
Salt and Pepper
- Mix all liquids well and set aside.
- Combine all the ingredients and add the salad dressing. Mix well and refrigerate for a few hours.
- Cut avocado into cubes and mix in when ready to serve
